Cook the Tortellini
- Bring a large pot of salted water to a boil.
- Add tortellini and cook according to package instructions until tender.
- Drain and rinse with cold water to stop cooking and prevent sticking.
- Tip: Toss cooked tortellini with a drizzle of olive oil to keep them from sticking.
Cook the Bacon
- In a skillet over medium heat, cook bacon until crispy.
- Remove and drain on paper towels, then crumble into small pieces.
Prepare the Dressing
- In a small bowl, whisk together ranch dressing, mayonnaise (if using), garlic powder, black pepper, and lemon juice.
- Taste and adjust seasoning if needed.
Assemble the Salad
- In a large mixing bowl, combine cooled tortellini, crumbled bacon, cherry tomatoes, cucumber, red bell pepper, cheese, and green onions.
- Pour dressing over salad and gently toss until all ingredients are evenly coated.
Chill and Serve
