Ingredients
  

For the Salad:
  • 1 package 9–10 oz refrigerated cheese tortellini
  • 6 –8 slices of bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 2 –3 green onions sliced
  • Optional: Fresh parsley for garnish
For the Dressing:
  • 1/2 cup ranch dressing store-bought or homemade
  • 2 tablespoons mayonnaise optional for extra creaminess
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice or white vinegar for tang

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil.
  2. Add tortellini and cook according to package instructions until tender.
  3. Drain and rinse with cold water to stop cooking and prevent sticking.
  4. Tip: Toss cooked tortellini with a drizzle of olive oil to keep them from sticking.
Cook the Bacon
  1. In a skillet over medium heat, cook bacon until crispy.
  2. Remove and drain on paper towels, then crumble into small pieces.
Prepare the Dressing
  1. In a small bowl, whisk together ranch dressing, mayonnaise (if using), garlic powder, black pepper, and lemon juice.
  2. Taste and adjust seasoning if needed.
Assemble the Salad
  1. In a large mixing bowl, combine cooled tortellini, crumbled bacon, cherry tomatoes, cucumber, red bell pepper, cheese, and green onions.
  2. Pour dressing over salad and gently toss until all ingredients are evenly coated.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  2. Garnish with fresh parsley before serving.
  3. Optional: Add extra shredded cheese or a few more bacon crumbles on top for presentation.
