Preheat the Oven
- Set your oven to 425°F (220°C). Lining a baking sheet with parchment paper ensures the potato slices won’t stick and makes cleanup easier.
Prepare the Potato Slices
- Wash and scrub the potatoes thoroughly.
- Slice them thinly, about 1/8 to 1/4 inch thick, for even baking.
- Place the slices in a mixing bowl, drizzle with olive oil, and season with salt, pepper, and any optional spices. Toss to coat evenly.
- Tip: Uniform thickness ensures that all slices cook evenly and achieve a consistent crispiness.
Bake the Potato Slices
- Arrange the potato slices in a single layer on the prepared baking sheet.
- Bake for 15–20 minutes, flipping halfway through, until edges are lightly golden and the potatoes are tender.
Add the Cheese
- Sprinkle shredded cheddar cheese generously over each potato slice.
- Return to the oven and bake for an additional 5–7 minutes, or until the cheese melts and starts to bubble.
- Optional: Broil for 1–2 minutes for extra golden, crispy cheese edges.
Garnish and Serve
- Remove from the oven and allow the potato slices to cool for a couple of minutes.
- Top with chopped chives, bacon bits, or a dollop of sour cream if desired.
- Serve warm as a snack, side dish, or appetizer.
