Ingredients
  

For the Graham Cracker Crust
  • 1 ¾ cups graham cracker crumbs
  • 6 tablespoons unsalted butter melted
  • ¼ cup granulated sugar
  • ½ teaspoon cinnamon
For the Cheesecake Layer
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
For the Apple Layer
  • 2 medium apples peeled and diced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
For the Topping
  • ½ cup caramel sauce
  • Optional: chopped pecans for crunch

Method
 

Prepare the Crust
  1. Mix graham crumbs with sugar, cinnamon, and melted butter. Press firmly into a lined baking pan. Bake at 350°F (175°C) for 8 minutes, then cool slightly.
Cook the Apples
  1. In a small saucepan, melt butter and add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until softened and caramelized. Set aside to cool.
Make the Cheesecake Filling
  1. Beat cream cheese until smooth. Add granulated sugar and brown sugar. Mix in eggs one at a time, then add vanilla and sour cream. Beat until creamy with no lumps.
Assemble the Bars
  1. Pour cheesecake mixture over the cooled crust. Evenly sprinkle the cooked apples on top. Gently press apples into the cheesecake layer.
Bake
  1. Bake at 350°F (175°C) for 35–40 minutes, or until the center is set but slightly jiggly. Cool completely on a rack, then chill for at least 2 hours.
Add Caramel & Slice
  1. Drizzle generously with caramel sauce. Cut into bars using a sharp knife for clean edges.
