Prepare the Crust
- Mix graham crumbs with sugar, cinnamon, and melted butter. Press firmly into a lined baking pan. Bake at 350°F (175°C) for 8 minutes, then cool slightly.
Cook the Apples
- In a small saucepan, melt butter and add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until softened and caramelized. Set aside to cool.
Make the Cheesecake Filling
- Beat cream cheese until smooth. Add granulated sugar and brown sugar. Mix in eggs one at a time, then add vanilla and sour cream. Beat until creamy with no lumps.
Assemble the Bars
- Pour cheesecake mixture over the cooled crust. Evenly sprinkle the cooked apples on top. Gently press apples into the cheesecake layer.
Bake
- Bake at 350°F (175°C) for 35–40 minutes, or until the center is set but slightly jiggly. Cool completely on a rack, then chill for at least 2 hours.
Add Caramel & Slice
- Drizzle generously with caramel sauce. Cut into bars using a sharp knife for clean edges.
