  • 2 crisp apples Honeycrisp, Fuji, or Granny Smith, julienned or grated
  • 2 tablespoons raisins or dried cranberries optional
  • 2 tablespoons chopped walnuts or pecans optional
  • 1 tablespoon fresh lemon juice to prevent browning
For the Dressing
  • 2 tablespoons plain Greek yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lemon juice or apple cider vinegar
  • Pinch of salt
  • Freshly ground black pepper to taste

Method
 

Prepare the Produce
  1. Peel and grate the carrots using a box grater or food processor. Core the apples and either grate them or cut into thin matchsticks. Toss apples immediately with lemon juice to prevent discoloration.
  2. Place carrots and apples in a large mixing bowl.
Add Optional Mix-Ins
  1. If using dried fruit or nuts, add them now. These ingredients aren’t required, but they add texture, contrast, and a little extra interest to each bite.
Make the Dressing
  1. In a small bowl, whisk together Greek yogurt (or mayonnaise), honey, lemon juice or vinegar, salt, and pepper. The dressing should be lightly sweet, tangy, and creamy—but not heavy.
  2. Taste and adjust sweetness or acidity as needed.
Combine and Toss
  1. Pour the dressing over the carrot apple mixture. Toss gently until everything is evenly coated. The salad should look glossy and lightly dressed, not weighed down.
