Prepare the Cauliflower
- Cut the cauliflower into florets and pulse in a food processor until it resembles fine rice. If using pre-riced cauliflower, skip this step.
- Microwave the riced cauliflower for 5–6 minutes until softened. Once cool enough to handle, transfer to a clean towel and squeeze out as much moisture as possible—this is crucial for a sturdy “bread.”
Make the Cauliflower Bread Dough
- In a mixing bowl, combine:
- Cauliflower
- Egg
- Mozzarella
- Parmesan
- Garlic powder
- Italian seasoning
- Salt & pepper
- Mix until a dough forms.
Shape and Bake the Cauliflower Bread
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper and shape the mixture into 4 rectangles (similar to sandwich bread slices). Bake for 10–12 minutes, flip carefully, and bake another 8–10 minutes until golden and firm.
Assemble the Sandwich
- Once the cauliflower slices are baked and slightly cooled, layer shredded cheese (and any optional fillings) between two slices.
Grill to Perfection
- Heat a skillet over medium heat. Add a small amount of butter and grill the cauliflower sandwich for 2–3 minutes per side, until the cheese melts and the exterior becomes crisp and golden.
Serve Warm
- Let the sandwich rest briefly before slicing. Serve hot for the best texture and melt.
