Ingredients
  

For the Cauliflower “Bread”
  • 1 medium head cauliflower or 4 cups riced cauliflower
  • 1 large egg
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt and pepper to taste
For the Grilled Cheese Filling
  • ¾ –1 cup shredded cheddar mozzarella, or a cheese blend
  • 1 tbsp butter for grilling

Method
 

Prepare the Cauliflower
  1. Cut the cauliflower into florets and pulse in a food processor until it resembles fine rice. If using pre-riced cauliflower, skip this step.
  2. Microwave the riced cauliflower for 5–6 minutes until softened. Once cool enough to handle, transfer to a clean towel and squeeze out as much moisture as possible—this is crucial for a sturdy “bread.”
Make the Cauliflower Bread Dough
  1. In a mixing bowl, combine:
  2. Cauliflower
  3. Egg
  4. Mozzarella
  5. Parmesan
  6. Garlic powder
  7. Italian seasoning
  8. Salt & pepper
  9. Mix until a dough forms.
Shape and Bake the Cauliflower Bread
  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper and shape the mixture into 4 rectangles (similar to sandwich bread slices). Bake for 10–12 minutes, flip carefully, and bake another 8–10 minutes until golden and firm.
Assemble the Sandwich
  1. Once the cauliflower slices are baked and slightly cooled, layer shredded cheese (and any optional fillings) between two slices.
Grill to Perfection
  1. Heat a skillet over medium heat. Add a small amount of butter and grill the cauliflower sandwich for 2–3 minutes per side, until the cheese melts and the exterior becomes crisp and golden.
Serve Warm
  1. Let the sandwich rest briefly before slicing. Serve hot for the best texture and melt.
