Ingredients
  

For the Dough:
  • 2 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • ¾ cup unsalted butter cold and cubed
  • 1 cup milk
For the Cheeseburger Filling:
  • 1 lb 450g ground beef
  • 1 small onion finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional: diced pickles cooked bacon bits, or ketchup

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine flour, sugar, salt, and baking powder.
  2. Add cold, cubed butter and cut it into the flour mixture until it resembles coarse crumbs.
  3. Gradually add milk, stirring until a soft dough forms.
  4. Knead gently on a floured surface for 1–2 minutes, then roll into a rectangle about ¼ inch thick.
Cook the Beef Filling
  1. Heat a skillet over medium heat and add the ground beef.
  2. Cook until browned, breaking up the meat with a spoon.
  3. Add chopped onions, garlic powder, paprika, salt, and pepper. Cook until onions are soft.
  4. Remove from heat and let the mixture cool slightly.
  5. Stir in shredded cheddar cheese and optional add-ins like pickles or bacon.
Assemble the Bomb Bites
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cut the dough into squares, roughly 3×3 inches.
  3. Spoon a generous amount of beef and cheese filling into the center of each square.
  4. Fold the corners over the filling and pinch to seal tightly.
  5. Place the sealed bites on the prepared baking sheet.
Bake to Perfection
  1. Optional: Brush the tops of each bite with a little milk or beaten egg for a golden finish.
  2. Bake for 18–20 minutes, or until the dough is lightly golden brown.
  3. Remove from the oven and let cool slightly before serving.
  4. Serving Suggestion: Pair with ketchup, mustard, or a spicy dipping sauce for an extra kick.
