Prepare the Dough
- In a large mixing bowl, combine flour, sugar, salt, and baking powder.
- Add cold, cubed butter and cut it into the flour mixture until it resembles coarse crumbs.
- Gradually add milk, stirring until a soft dough forms.
- Knead gently on a floured surface for 1–2 minutes, then roll into a rectangle about ¼ inch thick.
Cook the Beef Filling
- Heat a skillet over medium heat and add the ground beef.
- Cook until browned, breaking up the meat with a spoon.
- Add chopped onions, garlic powder, paprika, salt, and pepper. Cook until onions are soft.
- Remove from heat and let the mixture cool slightly.
- Stir in shredded cheddar cheese and optional add-ins like pickles or bacon.
Assemble the Bomb Bites
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cut the dough into squares, roughly 3×3 inches.
- Spoon a generous amount of beef and cheese filling into the center of each square.
- Fold the corners over the filling and pinch to seal tightly.
- Place the sealed bites on the prepared baking sheet.
Bake to Perfection
- Optional: Brush the tops of each bite with a little milk or beaten egg for a golden finish.
- Bake for 18–20 minutes, or until the dough is lightly golden brown.
- Remove from the oven and let cool slightly before serving.
