Prepare the Avocado Mixture
- In a bowl, add peeled avocados and mash gently with a fork. You want a creamy texture with a few small chunks remaining.
- Add lime juice, salt, pepper, garlic powder, and paprika if using. Mix until smooth and well seasoned.
- Tip: Lime juice not only adds flavor but helps prevent the avocado from browning.
Season and Prepare the Chicken
- If using leftover or rotisserie chicken, simply season it lightly with salt and pepper.
- If cooking chicken fresh:
- Season chicken breasts with salt, pepper, and a little paprika
- Cook in a skillet over medium heat for 4–5 minutes per side
- Let rest, then slice or shred
- Warm chicken works best for wraps, but this recipe also tastes great cold.
Assemble the Wraps
- Lay tortillas flat on a clean surface.
- Spread a generous layer of avocado mixture down the center of each tortilla. Add chicken evenly, followed by lettuce, tomatoes, onion, and cheese if using.
- Drizzle lightly with your preferred sauce, if desired.
Wrap and Serve
- Fold in the sides of the tortilla, then roll tightly from the bottom up. Slice in half for easier eating.
- Serve immediately or wrap tightly for meal prep.
