Ingredients
  

For the Chicken Marinade
  • 1 ½ lbs boneless chicken thighs or breasts
  • ½ cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
For the Tzatziki
  • 1 cup Greek yogurt
  • 1 small cucumber grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • Salt and pepper to taste
For the Gyros
  • 4 –6 pita or flatbread wraps
  • 1 cup chopped lettuce
  • 1 cup sliced tomatoes
  • ½ cup sliced red onion
  • ½ cup sliced cucumbers
  • Fresh parsley or dill for garnish

Method
 

Prepare the Chicken Marinade
  1. In a bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic, oregano, thyme, paprika, cumin, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 30 minutes, though 2 hours gives the best flavor.
Cook the Chicken
  1. Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 5–6 minutes per side, or until golden and fully cooked. Transfer to a cutting board and let it rest before slicing into thin strips.
Make the Tzatziki
  1. Combine Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Stir until smooth, creamy, and well blended. Refrigerate to allow the flavors to develop.
Prep the Vegetables
  1. Slice the tomatoes, onions, lettuce, and cucumbers. Keep everything chilled for best freshness.
Warm the Pita
  1. Lightly warm the pita bread in a dry skillet or microwave. Warm pita makes the wraps flexible and soft.
Assemble the Gyros
  1. Layer tzatziki onto the pita, add sliced chicken, top with lettuce, onions, tomatoes, cucumbers, and herbs. Drizzle extra tzatziki on top if desired.
Serve Immediately
