Method
 

Prepare the Chicken
  1. Start by preparing the chicken so it cooks evenly and stays juicy.
  2. Place chicken breasts between two pieces of parchment paper.
  3. Gently pound to an even thickness.
  4. Season both sides with salt and black pepper.
  5. This step ensures the chicken cooks uniformly and doesn’t dry out.
Cook the Chicken
  1. Heat olive oil in a skillet or grill pan over medium heat.
  2. Add chicken to the hot pan.

Toast the Ciabatta
  1. Lightly toasting the bread adds flavor and prevents sogginess.
  2. Place ciabatta halves cut-side down on a dry skillet or under a broiler.
  3. Toast until lightly crisp and golden.
  4. The bread should be warm and crunchy on the outside, still soft inside.
Assemble the Sandwich

  2. Spread pesto evenly on the cut sides of the ciabatta.
  3. Add sliced chicken on the bottom half.
  4. Place cheese slices on top of the chicken.
