Ingredients
  

For the Crock Pot Base
  • lbs beef sirloin or flank steak thinly sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 medium onion sliced
  • 3 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and black pepper
  • 1 cup beef broth
For the Creamy Cheese Sauce
  • 8 oz cream cheese cut into cubes
  • 1 cup heavy cream or half-and-half
  • cups shredded provolone or mozzarella
  • ½ cup shredded Parmesan
For Finishing
  • 1 20–22 oz package cheese tortellini (fresh or refrigerated)
  • Fresh parsley for garnish
  • Optional: Red pepper flakes for heat

Equipment

Method
 

Load the Crock Pot
  1. Place sliced beef, bell peppers, onions, and garlic into your slow cooker.
  2. Season with Italian seasoning, paprika, salt, and pepper.
  3. Pour in the beef broth to keep everything moist during cooking.
Slow Cook Until Tender
  1. Cook on low for 5–6 hours or high for 2½–3 hours until the beef becomes tender and the vegetables soften.
  2. This long, slow cook develops deep, savory flavor.
Add Cream Cheese & Dairy
  1. Once the beef is fully cooked, add the cream cheese cubes.
  2. Stir gently to help them melt into the broth.
  3. Pour in heavy cream and sprinkle in shredded provolone and Parmesan.
  4. Let the mixture melt together into a creamy, silky sauce.
Add Tortellini
  1. Stir in the cheese tortellini.
  2. Cook on high for 20–30 minutes, or until the tortellini is tender and fully coated in sauce.
  3. Stir occasionally to prevent sticking.
Finish & Serve
  1. Taste and adjust seasoning.
  2. Garnish with chopped parsley or a sprinkle of red pepper flakes.
