Marinate the Chicken
- In a bowl, combine buttermilk, garlic powder, paprika, salt, and pepper.
- Add chicken pieces, ensuring they are fully coated.
- Cover and refrigerate for at least 15 minutes (or up to 2 hours for extra tenderness).
Prepare the Breading
- In a shallow dish, mix flour, salt, black pepper, paprika, and cayenne (if using).
- Remove chicken from buttermilk, letting excess drip off.
- Dredge each piece in the seasoned flour until fully coated.
Fry the Chicken
- Heat oil in a deep fryer or heavy pot to 350°F (175°C).
- Carefully add chicken pieces to the hot oil without overcrowding.
- Fry for 5–7 minutes, or until golden brown and internal temperature reaches 165°F (74°C).
- Remove chicken and drain on a wire rack or paper towels.
Assemble the Sliders
- Slice slider buns in half and toast lightly if desired.
- Spread mayonnaise, aioli, or your favorite sauce on the bottom bun.
- Add fried chicken, pickles, and optional lettuce or coleslaw.
- Top with the other half of the bun and serve immediately.
