Ingredients

Greek Lemon Rice
  • Long-grain white rice
  • Olive oil
  • Onion or shallot finely chopped
  • Garlic cloves
  • Vegetable or chicken broth
  • Fresh lemon juice
  • Lemon zest
  • Salt
  • Black pepper
Optional Additions
  • Fresh parsley or dill
  • Bay leaf
  • Butter small amount for richness

Equipment

  • Medium saucepan with lid
  • Fine-mesh strainer
  • Knife
  • Cutting board
  • Wooden spoon or fork

Method

Step 1: Rinse the Rice
  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures fluffy grains.
Step 2: Build the Flavor Base
  1. Heat olive oil in a saucepan over medium heat. Add onion and cook until soft and translucent. Stir in garlic and cook briefly until fragrant.
Step 3: Toast the Rice
  1. Add the rinsed rice to the pan and stir for a minute. Light toasting helps the grains stay separate and absorb flavor evenly.
Step 4: Add Broth and Simmer
  1. Pour in warm broth and season with salt and pepper. Bring to a gentle boil, then reduce heat, cover, and simmer until the liquid is absorbed.
Step 5: Finish with Lemon
  1. Remove the pot from heat. Add lemon juice and zest, then gently fluff the rice with a fork. Cover and let rest for a few minutes.
Step 6: Add Herbs and Serve
  1. Stir in fresh herbs just before serving for brightness and aroma.
