Prep the Carrots
- Wash, peel, and trim the carrots. For whole carrots, slice them into evenly sized sticks or diagonal pieces for even cooking. Baby carrots can be used as-is, but halving them lengthwise helps them caramelize better.
Toss with Honey and Oil
- In a mixing bowl, combine the carrots with honey, olive oil or melted butter, salt, and pepper. Make sure each piece is coated evenly—this ensures caramelization and a glossy finish.
Arrange on a Baking Sheet
- Spread the carrots on a parchment-lined baking sheet. Avoid crowding the pan. Caramelization happens best when the carrots have space and aren’t steaming on top of each other.
Roast Until Caramelized
- Bake at 400°F (200°C) for 20–25 minutes, tossing halfway through. The carrots should be fork-tender with golden, caramelized edges.
Add Final Touches
- Once roasted, drizzle with just a touch more honey, squeeze fresh lemon juice over top, or sprinkle fresh herbs for brightness.
