  • 1 lb carrots whole, sliced, or baby carrots
  • 2 tbsp honey
  • 1 –2 tbsp olive oil or melted butter
  • ½ tsp salt
  • ¼ tsp black pepper
Optional Flavor Add-Ins
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 –2 tsp fresh lemon juice
  • Fresh thyme or rosemary
  • Crushed red pepper flakes
  • 1 tbsp brown sugar for extra caramelization

Method
 

Prep the Carrots
  1. Wash, peel, and trim the carrots. For whole carrots, slice them into evenly sized sticks or diagonal pieces for even cooking. Baby carrots can be used as-is, but halving them lengthwise helps them caramelize better.
Toss with Honey and Oil
  1. In a mixing bowl, combine the carrots with honey, olive oil or melted butter, salt, and pepper. Make sure each piece is coated evenly—this ensures caramelization and a glossy finish.
Arrange on a Baking Sheet
  1. Spread the carrots on a parchment-lined baking sheet. Avoid crowding the pan. Caramelization happens best when the carrots have space and aren’t steaming on top of each other.
Roast Until Caramelized
  1. Bake at 400°F (200°C) for 20–25 minutes, tossing halfway through. The carrots should be fork-tender with golden, caramelized edges.
Add Final Touches
  1. Once roasted, drizzle with just a touch more honey, squeeze fresh lemon juice over top, or sprinkle fresh herbs for brightness.
