Ingredients

Oat Peanut Butter Base
  • Old-fashioned rolled oats
  • Creamy peanut butter
  • Granulated sugar or brown sugar
  • Butter
  • Milk
  • Vanilla extract
  • Pinch of salt
Chocolate Topping
  • Semi-sweet chocolate chips
  • Peanut butter or butter for smoothness
Optional Add-Ins
  • Chopped peanuts
  • Coconut flakes
  • Mini chocolate chips

Equipment

  • Medium saucepan
  • Mixing bowl
  • Rubber spatula
  • Measuring cups and spoons
  • 9×9-inch or 9×13-inch pan
  • Parchment paper
  • Offset spatula or spoon

Method

Step 1: Prepare the Pan
  1. Line the pan with parchment paper, leaving overhang on the sides for easy lifting later.
Step 2: Cook the Base
  1. In a saucepan over medium heat, combine butter, sugar, milk, and salt. Bring to a gentle boil, stirring constantly, and cook briefly until the sugar dissolves fully.
Step 3: Add Peanut Butter and Vanilla
  1. Remove the saucepan from heat and stir in peanut butter and vanilla until smooth.
Step 4: Mix in the Oats
  1. Fold the oats into the warm mixture, stirring until evenly coated and thick.
Step 5: Press into the Pan
  1. Transfer the mixture to the prepared pan and press firmly into an even layer. Compacting the mixture helps the bars hold together.
Step 6: Make the Chocolate Topping
  1. Melt chocolate chips with peanut butter until smooth. Spread evenly over the oat layer.
Step 7: Chill and Set
  1. Refrigerate until firm, then lift out and slice into bars.
