  • 3 –4 ripe peaches sliced (fresh or grilled)
  • 1 ball burrata cheese 8 oz
  • 3 –4 cups arugula or mixed greens
  • ½ cup cherry tomatoes halved (optional but adds color)
  • ¼ cup toasted almonds or pistachios
  • Fresh basil leaves torn
  • Salt and black pepper to taste
For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of black pepper
For Serving
  • Balsamic glaze
  • Extra basil
  • Cracked pepper

Method
 

Prepare the Peaches
  1. Slice the peaches into wedges. If using grilled peaches, lightly oil each side and grill until caramelized. Grilling deepens their sweetness and adds a smoky finish.
Assemble the Greens
  1. Spread arugula or mixed greens across a serving plate. This creates a fresh, peppery base for the sweeter ingredients.
Add the Peaches and Tomatoes
  1. Layer sliced peaches and cherry tomatoes (if using) over the greens. Arrange them evenly for balanced bites and a beautiful presentation.
Place the Burrata
  1. Gently tear the burrata open or leave it whole in the center. Its creamy interior becomes part of the dressing as it spreads through the salad.
