Ingredients

For the Queso Dip
  • Mexican chorizo
  • White American cheese cubed
  • Monterey Jack cheese shredded
  • Whole milk or evaporated milk
  • Unsalted butter
  • Onion finely diced
  • Garlic minced
  • Green chilies optional
  • Salt to taste
Optional Add-Ins
  • Jalapeños
  • Fresh cilantro
  • Lime juice

Equipment

  • Medium skillet
  • Saucepan or heavy-bottom pot
  • Wooden spoon or spatula
  • Whisk
  • Knife and cutting board

Method

Step 1: Cook the Chorizo
  1. Heat a skillet over medium heat. Add chorizo and cook until fully browned and crumbly. Remove from pan and drain excess grease, leaving a small amount for flavor.
  2. Set aside.
Step 2: Build the Flavor Base
  1. In the same pan or a saucepan, melt butter. Add diced onion and cook until soft and translucent. Stir in garlic and cook briefly until fragrant.
  2. This creates a savory base that flavors the entire dip.
Step 3: Add Milk and Cheese
  1. Lower heat. Slowly add milk, then gradually stir in cheese in small batches. Stir constantly and avoid high heat to prevent separation.
  2. The mixture should melt into a smooth, creamy sauce.
Step 4: Combine with Chorizo
  1. Once the cheese is fully melted, stir in cooked chorizo and green chilies if using. Simmer gently until thickened and well combined.
  2. Taste and adjust seasoning.
